St. Patricks Day is such a fun holiday for the kids. We make St. Partick’s Day Crafts, decorate the house with Shamrocks and my kids’ favorite, making St. Partick’s Day-inspired snacks. These healthy St. Patrick’s Day pancakes are easy to make and the kids can help prepare them.
A lot of the snacks I’ve browsed on the internet are loaded with sugar and other not-so-great ingredients, I’ve tried to come up with a healthier version that the kids can enjoy for breakfast on St. Patricks Day. These pancakes get their green color from spinach, which you are not even going to taste. And that’s also the reason why they aren’t super vibrant (there is no food coloring in these).
I’m all about keeping it simple in the kitchen when cooking or baking with little ones. For these pancakes, all you have to do is toss all the ingredients in a blender (except the toppings). Easy peasy!

Healthy St. Patrick’s Day Pancakes for kids
What you need:
- 1 Banana
- 1 Cup of Spinach
- 1 Egg
- 1 Cup of Oats
- 1/4 Cup of Milk
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- 1 Tsp Vanilla Extract
- Pinch of Salt
Directions to make the Pancakes:
Toss all the ingredients in a blender and let it mix for at least a couple of minutes. The Pancakes mix should be thick but thin enough to spread out.
In a Pan heat up a little oil or butter and use a 1/4 measuring cup to pour the pancake batter into the pan. Cook on both sides until golden. The key to not letting the pancakes get brown too quickly is to cook them on low heat. If they are cooked on too high heat, the green color will turn brown. I wasn’t completely successful at first but figured it once most pancakes were already cooked lol.
You can top the pancakes with whatever you would like. I added some not-so-healthy dairy free whipped cream and lucky charms, which the kids obviously enjoyed. But feel free to stick to healthy by topping it with some greek yogurt, berries, and honey.
